TOFEE CARROT CAKE!!

BLEND THE FOLLOWING TOGETHER IN A BLENDER

60g Rolled Oats (or any low fat granola from the HEB options below):

  • Quaker Oats Wholesome Granola Goji & Blueberry,
  • Mornflake Oatbran Granola Raisin, Apple & Coconut.
  • Kellogg’s Delightful Fruit Granola
  • Harvest Morn Benefit Lighter Granola with Raspberry)

2 eggs
3 carrots
2 tbsp quark (or fromage frais) // 2Tbsp is 150g roughly
1 tbsp vanilla essence/ flavouring
1 tbsp Tesco Salted Caramel Flavouring
7 “squirts” of sugar free toffee drops

POUR BLENDED MIX INTO A BOWL & STIR IN THE FOLLOWING:

32g Crunchie (cut into 15-20 pieces)
** 32g is the multipack bar, not the snack size, or the full size – medium size!

1 tsp Baking powder
10g plain chocolate (grated over the top of cupcakes at end)
*85% Cocoa or Dr Oetker extra dark chocolate is the lowest syn
25g Whey Protein Powder  [OPTIONAL - YOU CAN LEAVE THIS OUT!)

POUR MIX INTO CUPCAKE MOULDS AND PLACE IN OVEN

For 1 big cake:
Pour into an oven proof dish and bake at 180° for around 30 minutes.
 
For individual Cupcakes/ fingers:
Put 1 Tbsp into a cupcake and bake on 180 for 15-20mins

Presuming you make 16 cupcakes from the above mix, these work out the following:
Calories: 47 kcal
Fat: 1.7g
Sugar: 2.6g
Syns: 1.5

 
SYNS Calculation !!
60g Oats – 10.5 Syns
25g Protein powder – 3yns 
32g Crunchie – 7.5syns
10g Plain chocolate grated Topping– 3syns

Total for 16 cupcakes = 24 Syns 
24 / 16 = 1.5 Syns per cupcake!!

If you use the Oats as your HEB you can have 2 x cupcakes for 1.5 Syns!
